Start by preparing a simple syrup: in a small saucepan, combine the sugar and water. Heat over medium-low heat, stirring until the sugar is completely dissolved. Remove from heat and let cool to room temperature.

    In a blender or food processor, add the diced mangoes, cooled simple syrup, lime juice, and a pinch of salt. Blend on high until the mixture is completely smooth and well combined.

      Taste the mixture and adjust the sweetness or lime juice according to your preference. If it's too sweet, you can add a little more lime juice for acidity.

        Pour the mango mixture into a shallow baking dish or an ice cream maker if you have one. If using an ice cream maker, churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

          If you're not using an ice cream maker, place the baking dish in the freezer and stir the mixture every 30 minutes with a fork for about 2-3 hours, until it is fully frozen and fluffy.
