1 cup mandarin orange segments (fresh or canned in juice)

1 cup pumpkin puree (canned or homemade)

1/2 cup oats

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger (optional)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup coconut flakes (optional)

1 teaspoon vanilla extract

Pinch of salt

Dark chocolate chips for topping (optional)

Prep the Mandarins: If using fresh mandarin oranges, peel and segment them, removing any seeds. If using canned, ensure they're well-drained.

    Mix the Base: In a medium mixing bowl, combine the pumpkin puree, oats, honey (or maple syrup), cinnamon, nutmeg, ginger (if using), and a pinch of salt. Mix until well combined.

      Incorporate Mandarins: Gently fold the mandarin orange segments into the pumpkin mixture until evenly dispersed. If you'd like to add walnuts, pecans, or coconut flakes, stir them in now.

        Shape the Treats: Using your hands, scoop the mixture and form small “pumpkin” balls, about 1 inch in diameter. Place each ball onto a parchment-lined baking tray.

          Chill: Once shaped, place the tray in the refrigerator for about 30 minutes to help the treats firm up.
