For the Mac and Cheese:

8 oz elbow macaroni

2 cups Brussels sprouts, trimmed and halved

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 cups whole milk

1/2 cup unsalted butter (divided)

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

For the Bacon Breadcrumbs:

4 strips of bacon, chopped

1 cup panko breadcrumbs

1/2 teaspoon dried thyme

1/4 teaspoon black pepper

2 tablespoons grated Parmesan cheese

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, following package instructions. Drain and set aside.

    Roast the Brussels Sprouts: Preheat the oven to 400°F (200°C). Toss the halved Brussels sprouts in 1 tablespoon of melted butter, salt, and pepper. Spread them out on a baking sheet and roast for about 20 minutes, or until golden and crispy, flipping halfway through.

      Make the Cheese Sauce: In a large saucepan, melt 1/2 cup of butter over medium heat. Whisk in the flour and cook for 1-2 minutes until bubbly. Slowly add the milk while whisking constantly to prevent lumps. Continue to cook and whisk until the mixture thickens, about 5-7 minutes.

        Add the Cheeses: Remove the saucepan from heat and stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Gradually add the cheddar and mozzarella cheeses, stirring until completely melted and smooth.

          Combine the Pasta and Sauce: Add the cooked macaroni and roasted Brussels sprouts to the cheese sauce. Stir until everything is well combined.

            Prepare the Bacon Breadcrumbs: In a skillet over medium heat, cook the chopped bacon until crispy. Remove excess grease, then add the panko breadcrumbs, dried thyme, and black pepper to the skillet. Sauté until the breadcrumbs are golden, about 3-5 minutes. Remove from heat and stir in the grated Parmesan.

              Assemble the Dish: Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish. Evenly sprinkle the bacon breadcrumbs on top.

                Bake: Bake in the preheated oven for about 25-30 minutes, or until the top is golden and the cheese is bubbling.
