2 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (Italian seasoned preferred)

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    In a shallow bowl, whisk the eggs together with Dijon mustard, garlic powder, onion powder, salt, and pepper.

      In another shallow bowl, combine the grated Parmesan cheese and breadcrumbs. Mix well to combine.

        Take each chicken breast and dip it first into the egg mixture, allowing the excess to drip off.

          Then, press the chicken into the Parmesan-breadcrumb mixture until well coated on both sides.

            Heat olive oil in a large skillet over medium heat. Once hot, add the coated chicken breasts, cooking for about 3-4 minutes on each side until golden brown.

              Once both sides are golden, transfer the chicken to the prepared baking sheet.

                Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).

                  Remove from the oven and let it rest for a few minutes before slicing.

                    Garnish with freshly chopped parsley, if desired, before serving.
