Loaded Shredded Beef {Birria} French Fries

2 lbs beef chuck roast

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons smoked paprika

2 teaspoons dried oregano

1 teaspoon ground black pepper

1 teaspoon salt

4 dried guajillo chilies, stems removed and seeds discarded

2 dried ancho chilies, stems removed and seeds discarded

4 cups beef broth

2 tablespoons apple cider vinegar

4 cups frozen French fries

1 cup shredded cheese (cheddar or Mexican blend)

1 cup pico de gallo

½ cup sour cream

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Season the chuck roast with salt and pepper and sear on all sides until browned, about 5-6 minutes per side. Remove the beef and set aside.

    In the same pot, add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic, cumin, smoked paprika, and oregano, cooking for 1-2 minutes until fragrant.

      While the onion mixture cooks, prepare the chilies. In a separate pot, bring about 2 cups of water to a boil and add the guajillo and ancho chilies. Let them soak for 10 minutes, or until softened.

        Once softened, blend the soaked chilies with a little bit of the soaking liquid to make a smooth paste; add it to the pot with the onions.

          Return the beef to the pot, add the beef broth and apple cider vinegar, bringing the mixture to a simmer. Cover and cook on low heat for about 3-4 hours, or until the beef is tender and shreds easily.

            Once the beef is ready, remove it from the pot and shred it using two forks. Return the shredded meat to the pot to absorb some of the sauce.

              While the beef is cooking, prepare your French fries according to package instructions until crispy and golden brown.

                Assemble the loaded fries: On a large serving platter or baking sheet, mound the crispy French fries. Top generously with the shredded beef, then sprinkle with the shredded cheese and allow it to melt slightly.

                  Add a hearty layer of pico de gallo, drizzling sour cream over the top, and garnish with fresh cilantro.
