Ingredients

3 large russet potatoes, peeled and grated

1 cup shredded cheddar cheese

½ cup cooked bacon, crumbled

¼ cup green onions, chopped

1 large egg

½ cup all-purpose flour

1 teaspoon baking powder

½ teaspoon garlic powder

Salt and pepper to taste

Olive oil or cooking spray for waffle maker

Instructions

Begin by preheating your waffle iron according to the manufacturer's instructions.

In a large mixing bowl, combine the grated potatoes, shredded cheddar cheese, crumbled bacon, and chopped green onions.

Add the egg to the mixture and stir well to combine.

In a separate bowl, whisk together the flour, baking powder, garlic powder, salt, and pepper.

Gradually add the dry ingredients to the potato mixture, stirring until everything is well combined and cohesive.

Lightly grease the waffle iron with olive oil or cooking spray.

Scoop about ½ to ¾ cup of the potato batter into the preheated waffle iron, closing the lid and cooking for about 5-7 minutes, or until the waffles are golden brown and crispy.

Carefully remove the waffle and repeat the process with the remaining batter.

Serve the loaded potato waffles warm, optionally topped with sour cream and extra green onions for garnish.
