4 large russet potatoes

1 lb sirloin steak, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup scallions, finely chopped

¼ cup crispy bacon bits (optional)

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Scrub the russet potatoes under cold water and dry them with a towel. Prick each potato several times with a fork. Rub them with a bit of olive oil and sprinkle with salt. Place directly on the oven rack and bake for about 45-60 minutes or until soft when pierced with a fork.

      Prepare the Steak Bites: While the potatoes are baking, heat a skillet over medium-high heat. In a bowl, toss the steak pieces with olive oil, garlic powder, smoked paprika, salt, and pepper.

        Cook the Steak: When the skillet is hot, add the seasoned steak bites in a single layer. Cook for 3-5 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove from heat and set aside.
