4 medium-sized russet potatoes

1 lb sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream

4 green onions, chopped

½ cup crispy bacon bits (optional)

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep Potatoes: Wash the russet potatoes thoroughly and pierce each one with a fork several times. Rub with olive oil, then sprinkle with salt. Place directly on the oven rack and bake for 45–60 minutes, or until tender when pierced with a fork.

      Cook Steak Bites: While the potatoes are baking, heat the remaining olive oil in a skillet over medium-high heat. Season the cubed steak with garlic powder, paprika, salt, and pepper. Add the steak to the skillet and cook for 4-5 minutes, stirring occasionally, until the steak is browned and cooked to your desired doneness. Remove from heat and set aside.

        Assemble Loaded Potatoes: Once the potatoes are done, carefully remove them from the oven. Cut a slit down the center of each potato and gently squeeze the ends to fluff the inside.

          Add Toppings: Divide the juicy steak bites among the potatoes, then top each with shredded cheddar cheese, a dollop of sour cream, and a generous sprinkle of chopped green onions. If desired, add crispy bacon bits for extra flavor.

            Melt Cheese: Return the loaded potatoes to the oven for an additional 5-7 minutes, just until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately.
