4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

4 slices crispy bacon, crumbled

3 green onions, sliced (for garnish)

Salt to taste

Instructions
 

In a large pot, add the diced potatoes, chopped onion, minced garlic, and chicken or vegetable broth. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to medium-low and let it simmer for about 15-20 minutes or until the potatoes are tender.

      Use a potato masher to gently mash the potatoes to your desired consistency (leave some chunks for texture if you like).

        Stir in the heavy cream, sour cream, smoked paprika, black pepper, and cayenne pepper (if using). Cook for an additional 5 minutes, allowing the soup to thicken slightly.

          Add the shredded cheddar cheese and stir until melted and well combined. Season with salt to taste.

            Serve hot, garnishing each bowl with crumbled bacon, sliced green onions, and additional cheese if desired.
