1 cup plain Greek yogurt

3 large eggs, separated

1/2 cup granulated sugar

1/4 cup olive oil

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.

    In a large mixing bowl, whisk together the Greek yogurt, egg yolks, granulated sugar, olive oil, and vanilla extract until smooth and well combined.

      In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the yogurt mixture, stirring until just combined. Incorporate the lemon zest for a refreshing flavor.

        In another clean bowl, beat the egg whites with an electric mixer on medium-high speed until soft peaks form. This will give your cake its light, fluffy texture.
