10 oz (280g) pasta (spaghetti or fettuccine)

2 cups fresh spinach, roughly chopped

1 lemon (zest and juice)

3 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, stirring for about 1 minute until fragrant.

      Add Spinach: Add the chopped spinach to the skillet and sauté for 2-3 minutes until wilted.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the spinach. Pour in the lemon juice and zest, and toss well to combine. If the pasta seems dry, gradually add some reserved pasta water as needed to achieve a creamy consistency.

          Add Cheese and Season: Sprinkle in the Parmesan cheese, tossing until everything is coated and mixed together. Season with salt and pepper to taste.
