1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon lemon zest

1 tablespoon lemon juice

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh raspberries (or frozen, thawed and drained)

1/2 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the egg, lemon juice, and lemon zest to the creamed butter and sugar. Mix until fully incorporated.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

          Gently fold in the raspberries, being careful not to crush them too much; it's okay if a few break apart for added flavor!

            Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheets, leaving space between each for spreading.
