1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

Zest and juice of 2 large lemons

1 tablespoon freshly cracked black pepper

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

Wooden skewers (soaked in water for 30 minutes)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, whisk together the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, dried thyme, and salt until well combined.

    Add the chicken cubes into the marinade and ensure each piece is evenly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes (preferably 1-2 hours for more flavor).

      Preheat your grill or grill pan over medium-high heat.

        Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

          Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/75°C).

            Remove the skewers from the grill and let them rest for a few minutes.

              Garnish with freshly chopped parsley before serving.
