2 cans (5 oz each) tuna in water, drained

1 cup breadcrumbs (preferably panko)

¼ cup mayonnaise

2 tablespoons Dijon mustard

1 large egg, lightly beaten

3 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon onion powder

Salt and pepper to taste

Olive oil, for frying

In a large mixing bowl, flake the drained tuna with a fork until it’s finely shredded.

    Add the breadcrumbs, mayonnaise, Dijon mustard, beaten egg, lemon juice, lemon zest, minced garlic, parsley, onion powder, salt, and pepper into the bowl.

      Mix everything thoroughly until fully combined. If the mixture seems too wet, add a bit more breadcrumbs until it holds together well.

        Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to help firm up the mixture.

          After refrigerating, form the mixture into small patties (about 2-3 inches in diameter). You should have around 8-10 cakes.

            In a large skillet, heat a couple of tablespoons of olive oil over medium heat.

              Once the oil is hot, carefully place the tuna cakes in the skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and heated through.

                Transfer the cooked tuna cakes to a paper towel-lined plate to absorb any excess oil.

                  Serve warm with a squeeze of fresh lemon juice on top, and pair with a side salad or tartar sauce if desired.
