1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 tablespoons lemon zest (from about 2 lemons)

¼ cup fresh lemon juice

½ teaspoon vanilla extract

8 oz cream cheese, softened

½ cup powdered sugar

2 tablespoons heavy cream

Instructions
 

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-5 minutes).

        Add in the eggs one at a time, mixing well after each addition. Then, add the lemon zest, lemon juice, and vanilla extract, mixing until combined.

          Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix; it's okay if there are a few lumps.

            In a separate bowl, beat together the softened cream cheese, powdered sugar, and heavy cream until smooth and creamy.

              Spoon half of the muffin batter into each muffin cup until they're about ⅓ full.

                Add a heaping teaspoon of the cream cheese mixture into the center of each muffin cup, then multiply with the remaining batter to fill the cups to about ¾ full.

                  Bake for 18-20 minutes or until the muffins are golden and a toothpick inserted in the center comes out clean.

                    Allow muffins to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
