Ingredients

1 pre-made pie crust (9-inch)

1 cup granulated sugar

1 tablespoon all-purpose flour

1/4 teaspoon salt

3 large eggs

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Pie Crust: Place the pre-made pie crust in a 9-inch pie dish. If it isn't already baked, follow the package instructions for blind baking and set aside.

Mix the Dry Ingredients: In a mixing bowl, whisk together the sugar, flour, and salt until combined.

Add the Eggs: Crack the eggs into the bowl and whisk until smooth.

Mix in the Lemon Juice and Zest: Stir in the freshly squeezed lemon juice and lemon zest until well incorporated.

Incorporate the Butter and Vanilla: Pour in the melted butter and vanilla extract, mixing until fully combined and smooth.

Pour into Crust: Carefully pour the lemon filling into the prepared pie crust, being cautious not to overfill.

Bake: Place the pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and the top has a slight golden color. You may cover the edges of the crust with foil if they begin to brown too quickly.

Cool and Serve: Remove the pie from the oven and let it cool at room temperature for at least an hour before slicing. For the best results, chill in the refrigerator for an additional hour before serving.
