Ingredients
  

4 cod fillets (about 6 oz each)

3 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Start by patting the cod fillets dry with paper towels and season both sides generously with salt and pepper.

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat until the butter is melted and bubbly.

      Carefully add the cod fillets to the skillet, searing for about 3-4 minutes on each side, or until golden brown and cooked through (the fish should flake easily with a fork). Remove the fillets from the skillet and set aside on a plate.

        In the same skillet, add the remaining olive oil and butter. Once melted, stir in the minced garlic and sauté for about 30 seconds until fragrant.

          Add the lemon zest and juice to the skillet, followed by the fresh thyme. Stir well to combine and let it simmer for about 1 minute to let the flavors meld.

            Return the cod fillets to the skillet, spooning the lemon butter sauce over the top. Cook for an additional minute to reheat the fish.

              Taste the sauce and adjust the seasoning with more salt and pepper if needed.

                Plate the cod fillets and garnish with freshly chopped parsley. Drizzle any remaining lemon butter sauce over the tops.
