1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 teaspoons pure vanilla extract

2 tablespoons lemon zest (from about 2 lemons)

2 cups all-purpose flour

1/2 teaspoon salt

1/4 teaspoon baking powder

1/3 cup fresh lemon juice

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.

    In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

      Add the egg, vanilla extract, and lemon zest to the bowl, mixing until well combined.

        In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Press the dough evenly into the bottom of the prepared baking pan to form a crust layer. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.

            While the crust is baking, prepare the lemon filling. In a medium bowl, whisk together the fresh lemon juice and an additional 1 cup of granulated sugar.

              Add 2 large eggs to the lemon juice mixture and whisk until smooth. Pour this mixture over the baked crust once it has finished baking.

                Return the pan to the oven and bake for an additional 20 minutes, or until the filling is set and slightly firm to the touch.

                  Allow the lemon bar cookies to cool in the pan on a wire rack. Once cooled, lift them out using the parchment paper overhang and cut into squares.

                    Dust with powdered sugar just before serving for an extra touch of sweetness and presentation.
