6 large jalapeño peppers

2 cups leftover macaroni and cheese

1/2 cup shredded cheddar cheese

1/4 cup cream cheese, softened

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Olive oil (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Jalapeños: Slice the jalapeños in half lengthwise and remove the seeds (and membranes, if you want less heat) using a small spoon or knife.

      Make the Filling: In a bowl, combine the leftover macaroni and cheese with the shredded cheddar cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

        Stuff the Jalapeños: Using a spoon, fill each jalapeño half with the mac 'n' cheese mixture, pressing it in firmly to ensure it stays put.

          Add Topping: If desired, mix the breadcrumbs with a little olive oil for extra crunch and sprinkle on top of each stuffed jalapeño.

            Bake: Arrange the stuffed jalapeños on a baking sheet lined with parchment paper. Drizzle a little olive oil on top, then bake in the preheated oven for 20-25 minutes, or until the jalapeños are slightly softened and the filling is hot.
