Ingredients
  

2 slices of bread (your choice: sourdough, white, or whole grain)

1 cup leftover mac 'n' cheese

4 strips of cooked bacon, chopped

1/2 cup shredded cheddar cheese

2 tablespoons unsalted butter

Optional: sliced tomatoes or jalapeños for added flavor

Salt and pepper to taste

Instructions
 

Prepare Filling: In a bowl, combine the leftover mac 'n' cheese with the chopped bacon. You can also add sliced tomatoes or jalapeños if desired. Mix well and season with salt and pepper to taste.

    Assemble Sandwich: Lay one slice of bread on a clean surface. Spread a generous portion of the mac 'n' cheese and bacon mixture on top. Sprinkle shredded cheddar cheese over the mixture for extra cheesiness. Top with the second slice of bread.

      Butter the Bread: Spread 1 tablespoon of butter on the outside of the sandwich. Flip the sandwich to butter the other side as well.

        Grill the Sandwich: Heat a skillet or frying pan over medium heat. Once hot, place the sandwich in the pan, buttered side down. Grill for about 3-4 minutes or until the bread is golden brown.

          Flip and Cook: Carefully flip the sandwich using a spatula and grill the other side until it is golden brown and the cheese is melted, about another 3-4 minutes.

            Serve: Once both sides are crispy and the cheese is gooey, remove the sandwich from the pan. Let it cool for a minute, then cut it in half and serve it warm, optionally with a side of your favorite dipping sauce (like ranch or marinara).
