1 lb Italian sausage (bulk or casings removed)

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

4 cups chicken or vegetable broth

2 teaspoons dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

2 cups fresh spinach

1.5 cups shredded mozzarella cheese

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned, breaking it into smaller pieces as it cooks. Drain any excess fat.

    Add the diced onion and cook for about 5 minutes, or until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Pour in the crushed tomatoes, tomato sauce, and broth. Add the dried basil, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.

        Stir in the broken lasagna noodles and cook according to package instructions until al dente, usually about 10 minutes.

          Once the noodles are cooked, add the ricotta cheese and spinach to the soup, stirring gently until combined and the spinach is wilted.

            Serve hot, garnished with shredded mozzarella cheese and fresh basil on top. Enjoy your comforting bowl of Lasagna Soup!
