Lasagna Grilled Cheese

Ingredients
  

8 slices of sourdough bread

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup marinara sauce

1 cup cooked ground beef or Italian sausage (optional)

1 tablespoon fresh basil, chopped

1 tablespoon pesto (optional)

4 tablespoons butter

Salt and pepper to taste

Instructions
 

In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, chopped basil, salt, and pepper. Mix until well combined.

    Take 4 slices of sourdough bread and spread a generous layer of the ricotta mixture on each slice.

      If using, layer the cooked ground beef or sausage on top of the ricotta, followed by a spoonful of marinara sauce.

        Sprinkle the remaining shredded mozzarella cheese on top of each slice.

          Top each sandwich with the other 4 slices of sourdough bread to create a complete sandwich.

            Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place one or two sandwiches in the skillet (depending on size).

              Grill the sandwiches for about 4-5 minutes on each side, or until golden brown and the cheese has melted. Add more butter to the pan as needed to achieve a crispy crust.

                Once grilled, remove from the skillet and cut the sandwiches in half. Serve with extra marinara sauce for dipping.
