1 lb (450g) beef sirloin, sliced thinly against the grain

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 dried red chili peppers

1 tablespoon Sichuan peppercorns (optional)

3 cloves garlic, minced

1 inch fresh ginger, grated

1 bell pepper (red or green), diced

1 cup unsalted roasted peanuts

3 green onions, chopped

Sesame oil for drizzle

Salt and pepper to taste

Instructions
 

Marinate the Beef: In a bowl, combine the beef slices, soy sauce, rice vinegar, hoisin sauce, and cornstarch. Mix well to coat the beef, cover, and refrigerate for at least 30 minutes.

    Prepare the Stir-Fry Base: Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the dried red chili peppers and Sichuan peppercorns (if using). Stir for about 30 seconds until fragrant.

      Cook the Beef: Increase the heat to high and add the marinated beef to the skillet. Stir-fry for 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring quickly to avoid burning. Then, add the diced bell pepper and stir-fry for 2-3 minutes until tender-crisp.

          Combine Everything: Return the beef to the skillet and add the roasted peanuts. Toss everything together, allowing the flavors to meld for another minute. If needed, season with salt and pepper.

            Finish and Serve: Remove from the heat and drizzle a bit of sesame oil over the dish. Garnish with chopped green onions. Serve hot over steamed rice or noodles.
