Ingredients

1 package (8 oz) King’s Hawaiian Sweet Rolls

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup sour cream

1/2 teaspoon lemon zest

1 cup crushed pineapple, drained

1/4 cup toasted coconut flakes

1 egg, beaten (for egg wash)

Optional: Fresh mint leaves for garnish

Instructions

Preheat your oven to 375°F (190°C).

In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, sour cream, and lemon zest. Whip until smooth and creamy.

Gently fold in the crushed pineapple and toasted coconut flakes to the cream cheese mixture until evenly distributed.

Take the King’s Hawaiian Sweet Rolls and slice them in half horizontally. You can also hollow out a bit from the middle to create a well for the filling, if desired.

Place the bottom halves of the rolls on a baking sheet lined with parchment paper.

Generously spoon the cheesecake and pineapple filling onto each roll half, then place the top halves on each filled bottom to create a sandwich.

Brush the tops of the rolls with the beaten egg to enhance the golden color during baking.

Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and the filling is slightly bubbling.

Once baked, allow to cool for a few minutes before serving.

Optionally garnish with fresh mint leaves and dust with extra powdered sugar for an elegant touch.
