1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, sliced

1 pound kielbasa sausage, sliced

6 cups vegetable or chicken broth

2 cups fresh spinach

1 package (9 oz) cheese tortellini

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, red bell pepper, and sliced carrot. Cook for another 3-4 minutes until the vegetables begin to soften.

      Add the sliced kielbasa to the pot and cook for 5-7 minutes until the sausage is browned.

        Pour in the vegetable or chicken broth and bring the mixture to a boil.

          Add the tortellini and cook according to the package instructions, usually about 3-5 minutes.

            Once the tortellini is tender, stir in the fresh spinach, dried oregano, smoked paprika, and season with salt and pepper to taste.

              Let the soup simmer for an additional 2-3 minutes until the spinach is wilted.

                Serve hot, garnished with freshly grated Parmesan cheese on top.
