1 lb kielbasa, sliced into ¼-inch rounds

2 medium potatoes, diced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon dried thyme

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the diced potatoes to the skillet and season with salt and pepper. Cook for about 8-10 minutes, stirring occasionally, until they're golden brown and fork-tender.

      Once the potatoes are cooked, push them to one side of the skillet. In the other half, add the sliced kielbasa and cook until browned (about 3-5 minutes).

        Add the diced onion, minced garlic, and both chopped bell peppers to the skillet. Stir everything together and cook for another 5-7 minutes, until the vegetables are softened.

          Sprinkle the smoked paprika and thyme over the mixture and stir to combine, allowing the spices to toast slightly for about a minute.

            Taste and adjust seasoning if necessary, then remove from heat.

              Garnish with fresh chopped parsley before serving.
