Ingredients
  

1 medium head of cauliflower, cut into florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender. Drain well and let cool slightly.

      Once cooled, transfer the cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for achieving crispy bites.

        In a mixing bowl, combine the drained cauliflower, cheddar cheese, Parmesan cheese, eggs, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.

          Using a tablespoon, scoop out the mixture and form small bites (about 1-2 inches in diameter) and place them onto the prepared baking sheet.

            Bake in the preheated oven for 20-25 minutes or until the bites are golden brown and crispy.

              Remove from the oven and let them cool for a few minutes. Garnish with chopped parsley before serving.
