1 lb (450g) corned beef, chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups (960ml) beef broth

1 cup (240ml) heavy cream

1 cup (100g) shredded cabbage (green or red)

1 cup (100g) shredded Swiss cheese

2 tbsp Dijon mustard

1 tbsp Worcestershire sauce

1 tsp dried dill

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot over medium heat, add the chopped corned beef and cook until lightly browned, about 5-7 minutes.

    Add the diced onion and minced garlic to the pot, cooking until the onion becomes translucent, about 3-4 minutes.

      Stir in the beef broth, bringing the mixture to a simmer.

        Add the shredded cabbage, Dijon mustard, Worcestershire sauce, and dried dill. Stir well and let the soup simmer for 15-20 minutes until the cabbage is tender.

          Lower the heat and slowly add the heavy cream, stirring to combine. Avoid boiling at this point to keep the cream from separating.

            Mix in the shredded Swiss cheese, stirring until melted and well incorporated into the soup. Season with salt and black pepper to taste.

              Once everything is combined and heated through, remove the soup from the stovetop.

                Serve hot, garnished with fresh chopped parsley for an extra touch.
