1 pound pork loin, sliced into thin cutlets

1 cup almond flour

2 large eggs

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup coconut oil or ghee for frying

1/2 cup unsalted butter

Zest of 1 lemon

Juice of 1 lemon

Fresh parsley, chopped for garnish

Prep the Pork: Place each pork cutlet between two pieces of plastic wrap. Use a meat mallet to gently pound until about 1/4 inch thick. This tenderizes the meat and ensures even cooking.
