Jamaican Pumpkin Soup

1 medium-sized pumpkin (about 3-4 pounds) peeled and diced

1 cup coconut milk

1 onion, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 stalks green onions, sliced

1 carrot, diced

2 cups vegetable broth

1 teaspoon allspice

1 teaspoon thyme (dried or fresh)

1 habanero pepper, whole (or to taste)

Salt and pepper to taste

2 tablespoons olive oil

Lime wedges (for serving)

Fresh cilantro for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, sautéing until the onion is translucent.

    Stir in the diced carrot and allow it to cook for about 5 minutes, until starting to soften.

      Add the diced pumpkin and sauté for another 5 minutes, stirring occasionally.

        Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and add the whole habanero pepper, allspice, thyme, and salt and pepper to taste.

          Cover the pot and let it simmer for about 20-25 minutes, or until the pumpkin is tender.

            Remove the habanero pepper and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender.

              Return the blended soup to the pot and stir in the coconut milk. Heat through over low heat for another 5 minutes.

                Taste and adjust seasoning if necessary. If you prefer a thinner soup, add more vegetable broth to reach your desired consistency.

                  Serve hot, garnished with fresh cilantro and a squeeze of lime juice on top.
