1 pound ground beef

1 pound ground pork

1 cup breadcrumbs

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/4 cup pickled jalapeños, diced (plus extra for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

Cooking oil for frying

Instructions
 

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

    In a separate bowl, blend the softened cream cheese, shredded cheddar cheese, and diced pickled jalapeños until smooth and evenly mixed. This will be your stuffing.

      Preheat a large skillet over medium heat and add a few tablespoons of cooking oil.

        Take a handful of the meat mixture and flatten it into a patty in your hand. Place about a tablespoon of the cream cheese mixture in the center and wrap the meat around the filling, rolling it into a ball. Repeat until all meat and cheese mixture is used.

          Once the skillet is hot, gently place the meatballs in the oil, searing them on all sides until golden brown (about 8-10 minutes).

            Once cooked, remove the meatballs and place them on a paper towel-lined plate to absorb excess oil.

              Serve warm, garnished with additional diced jalapeños and chopped cilantro.
