2 pounds baby gold potatoes

3 tablespoons butter

½ cup cream cheese, softened

1 cup shredded cheddar cheese

2 green onions, sliced

Prep the Potatoes: Place the baby gold potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat. Boil for about 15-20 minutes, or until fork-tender.

    Drain and Cool: Drain the potatoes and let them cool for a few minutes until they are manageable.

      Smashed Potatoes: On a large baking sheet lined with parchment paper, place the potatoes, and using a fork or a potato masher, gently smash each potato flat, keeping them about ½ inch thick.

        Prepare the Mixture: In a bowl, combine the softened cream cheese, butter, half of the shredded cheddar cheese, chopped jalapenos (reserve a few for topping), crumbled bacon, and sliced green onions. Mix until smooth and well combined.
