1 pound kielbasa sausage

2 ripe peaches, pitted and diced

1 fresh jalapeno, deseeded and finely chopped

1 tablespoon olive oil

2 tablespoons honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the kielbasa in a Hasselback style: make diagonal cuts about 1/4 inch apart along the length of the sausage, ensuring not to cut all the way through.

      In a small bowl, combine the diced peaches, chopped jalapeno, olive oil, honey, smoked paprika, garlic powder, salt, and pepper. Mix until well combined.

        Place the kielbasa on a baking sheet lined with parchment paper. Gently open up the slices to create space for the peach-jalapeno mixture.

          Spoon the peach-jalapeno mixture into each of the cuts in the kielbasa, filling them generously.

            Bake in the preheated oven for 25-30 minutes, or until the kielbasa is browned and cooked through, and the peaches have become tender.

              Once done, remove from the oven and let it rest for a few minutes.

                Slice into rounds and serve warm, garnished with fresh cilantro.
