1 cup corn kernels (fresh or frozen)

1 jalapeño, finely chopped (seeds removed for less heat)

1/2 cup all-purpose flour

1/4 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

2 tablespoons chopped fresh cilantro (optional)

1/2 cup buttermilk (or milk)

1 large egg

Vegetable oil for frying

In a mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, smoked paprika, and chopped cilantro (if using). Mix well to combine.

    In a separate bowl, whisk together the buttermilk and egg until well blended.

      Add the corn kernels and chopped jalapeño to the wet mixture, stirring to incorporate.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are fine.

          Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

            Once the oil is hot (you can test by dropping a tiny amount of batter into it; it should sizzle), drop tablespoons of the fritter batter into the skillet, spacing them apart for even cooking.

              Fry until golden brown on one side, about 3-4 minutes, then flip and cook for another 2-3 minutes until the second side is golden.

                Remove the fritters from the pan and drain on paper towels. Repeat with remaining batter, adding more oil if necessary.

                  Serve hot, garnished with extra cilantro or a squeeze of lime if desired.
