3 to 4 pounds chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

1 large onion, chopped

4 carrots, sliced

2 stalks celery, chopped

2 cups vegetable broth

1 can (15 ounces) diced tomatoes, with juices

1 tablespoon tomato paste

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

1 bay leaf

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 325°F (160°C).

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then brown it on all sides in the hot oil, about 4-5 minutes per side. Remove the roast and set aside.

      In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables begin to soften.

        Stir in the diced tomatoes, tomato paste, vegetable broth, oregano, basil, and bay leaf, scraping up any brown bits from the bottom of the pot.

          Return the browned pot roast to the pot, making sure it is submerged in the liquid. Bring it to a gentle simmer.

            Cover the pot and transfer it to the preheated oven. Cook for about 3 to 4 hours until the meat is tender and easily shreds with a fork.

              Once done, remove the pot from the oven. Let it rest for 10-15 minutes before slicing.

                Serve the pot roast sliced, topped with the rich tomato and vegetable sauce, and garnish with freshly chopped parsley.
