Ingredients

3 cups all-purpose flour

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1 cup finely chopped walnuts (or hazelnuts)

1/2 cup powdered sugar (for dusting)

1/4 cup milk (for filling)

1 teaspoon cinnamon (optional, for filling)

Instructions

Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the butter mixture until a soft dough forms.

Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour to make it easier to handle.

Prepare the Nut Filling: In a small bowl, combine the finely chopped walnuts, milk, and cinnamon (if using). Mix until well combined and set aside.

Roll Out the Dough: Preheat your oven to 350°F (175°C). On a lightly floured surface, take a portion of the chilled dough and roll it out into a rectangle, about 1/8 inch thick.

Fill the Dough: Spread a thin layer of the nut mixture over the rolled dough, leaving about a ½ inch border around the edges.

Roll and Seal: Carefully roll the dough starting from one long edge to form a log. Pinch the seams and ends to seal, making sure the filling is secured within.

Cut into Cookies: Slice the rolled dough into 1-inch pieces and place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 12-15 minutes, or until lightly golden on the edges. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Dust with Powdered Sugar: Once cooled, sprinkle the cookies with powdered sugar for a beautiful finish.

Serve and Enjoy: Enjoy these delicious Italian Nut Roll Cookies with coffee or as a sweet treat after a meal!
