4 slices of sourdough bread

4 slices of fresh mozzarella cheese

2 slices of prosciutto

1 small tomato, sliced

1 tablespoon fresh basil pesto

2 tablespoons olive oil

Salt and pepper to taste

Optional: grated Parmesan cheese for sprinkling

Instructions
 

Preheat a skillet or griddle over medium heat.

    Spread 1 tablespoon of olive oil on one side of each slice of sourdough bread.

      On the non-oiled side of two slices, spread a layer of basil pesto.

        Layer mozzarella cheese, prosciutto, and tomato slices on top of the pesto. Sprinkle with salt and pepper if desired.

          Top each sandwich with the remaining two slices of sourdough, oiled side facing out.

            Place the sandwiches in the skillet and grill for about 3-4 minutes until golden brown.

              Carefully flip the sandwiches and grill the other side for an additional 3-4 minutes until the cheese is melted and the bread is crispy.

                Remove from heat and let sit for 1 minute before slicing in half.

                  For an extra touch, sprinkle grated Parmesan cheese on top of the sandwiches before serving.
