4 chicken thighs, skin-on and bone-in

2 tablespoons olive oil

2 lemons (1 for juice, 1 sliced)

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional for heat)

1 cup cherry tomatoes, halved

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, juice of 1 lemon, minced garlic, dried oregano, basil, salt, black pepper, and red pepper flakes (if using). Mix until well combined.

      Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let it sit for about 15-20 minutes to absorb flavors.

        In a baking dish, arrange the marinated chicken thighs skin-side up. Scatter the lemon slices and halved cherry tomatoes around the chicken.

          Drizzle any remaining marinade over the dish.

            Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the skin is golden and crispy.

              Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves.
