4 lbs beef short ribs, bone-in

2 tablespoons olive oil

1 large onion, diced

2 carrots, diced

2 celery stalks, diced

4 cloves garlic, minced

2 cups beef stock

1 cup Irish whiskey (non-alcoholic whiskey flavoring can be used)

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 325°F (163°C).

    Season the short ribs generously with salt and pepper on all sides.

      In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the short ribs in batches, searing them on all sides until browned (about 3-4 minutes per side). Remove the short ribs and set aside.

        In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables begin to soften.

          Stir in the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

            Pour in the beef stock and Irish whiskey (or whiskey flavoring), scraping up any browned bits from the bottom of the pot.

              Add the brown sugar, Worcestershire sauce, dried thyme, and bay leaves, mixing well.

                Return the short ribs to the pot, ensuring they are submerged in the liquid. Bring to a simmer.

                  Cover the pot with a lid and transfer it to the preheated oven. Braise the short ribs for about 3 hours or until they are fork-tender.

                    Once done, remove the pot from the oven and carefully discard the bay leaves. If desired, you can skim excess fat from the surface of the braising liquid.

                      Serve the short ribs with a generous amount of the braising liquid over the top, and garnish with freshly chopped parsley.
