4 large russet potatoes, peeled and diced

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup butter, softened

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 pre-made pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Prepare the Potatoes: In a large pot, add diced potatoes and cover with cold water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and return to the pot.

    Make the Filling: Mash the potatoes until smooth. Stir in the cheddar cheese, sour cream, and softened butter until well combined.

      Sauté Aromatics: In a skillet over medium heat, melt a tablespoon of butter. Add chopped onion and sauté for about 3-4 minutes until soft and translucent. Add minced garlic and thyme, cooking for another minute until fragrant.

        Combine Mixtures: Add the sautéed onions and garlic to the potato mixture. Season with salt and pepper to taste. Mix well until everything is evenly incorporated.

          Assemble the Pie: Preheat your oven to 375°F (190°C). Roll out the pie crust and place it in a pie dish. Pour the potato mixture into the crust, spreading it evenly.

            Prepare for Baking: Fold any overhanging pie crust over the filling, creating a rustic edge. Brush the surface with the beaten egg for a golden finish.

              Bake: Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.

                Cool and Serve: Let the pie cool for about 10 minutes before slicing.
