1.5 lbs (700g) potatoes, peeled and cubed

1 cup kale, finely chopped (stems removed)

1 cup green cabbage, finely shredded

1/2 cup milk or cream

4 tablespoons butter, divided

4 green onions, finely sliced

Salt and pepper to taste

1/2 cup shallots, thinly sliced

1 tablespoon olive oil

Zest of 1 lemon

Instructions
 

In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are tender.

    While the potatoes are cooking, heat the olive oil in a small skillet over medium heat. Add the sliced shallots and cook, stirring frequently, until they are golden and crispy, about 5-7 minutes. Remove from heat and set aside.

      In the same skillet, melt 2 tablespoons of butter over medium heat. Add the kale and cabbage, sautéing for about 4-5 minutes until wilted. Stir in the green onions and cook for another minute, then remove from heat.

        Once the potatoes are tender, drain and return them to the pot. Mash the potatoes with a potato masher or fork until smooth.

          Stir in the milk (or cream), remaining butter, sautéed vegetables, and lemon zest. Mix until everything is well combined. Season with salt and pepper to taste.

            Transfer the colcannon to a serving dish. Top with the crispy shallots for added texture and garnish with a few extra green onions if desired.
