8 Irish pork sausages (bangers)

4 large potatoes, peeled and cubed

2 cups kale or cabbage, finely chopped

1 cup whole milk

4 tablespoons unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

Salt and black pepper to taste

1 tablespoon Dijon mustard (optional)

Fresh chives, chopped (for garnish)

Cook the Bangers: In a large skillet, brown the Irish bangers over medium heat for about 10-12 minutes, turning occasionally until they are golden brown and cooked through. Remove from the skillet and set aside, keeping warm.

    Boil the Potatoes: In a large pot, add the cubed potatoes and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 15 minutes or until the potatoes are tender when pierced with a fork.

      Sauté the Greens: While the potatoes are boiling, in the same skillet used for the bangers, add the butter and let it melt. Add the chopped onion and garlic, sautéing until the onion becomes translucent and fragrant (about 5 minutes). Then add the chopped kale or cabbage, cooking until just wilted (about 3-4 minutes).

        Mash the Potatoes: Once the potatoes are tender, drain them and return them to the pot. Add the sautéed onion and greens mixture, along with the milk, butter, salt, pepper, and Dijon mustard (if using). Mash everything together until smooth and creamy.

          Serve: Place a generous scoop of colcannon mash on a plate, then arrange the bangers on top or to the side. Garnish with chopped fresh chives for an added pop of color and flavor.
