Ingredients
  

4 slices of thick-cut Irish bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced

4 cups low-sodium chicken broth

2 cups green cabbage, chopped

1 cup carrots, diced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped bacon and sauté until crispy, about 5–7 minutes.

    Once the bacon is cooked, using a slotted spoon, remove it from the pot and set it aside, leaving the rendered fat in the pot.

      Add the diced onion and garlic to the pot and sauté until the onion is translucent, about 3–4 minutes.

        Stir in the diced potatoes and carrots, cooking for an additional 5 minutes.

          Pour in the chicken broth and bring it to a boil.

            Once boiling, add the chopped cabbage, dried thyme, bay leaf, and the reserved bacon.

              Reduce the heat to a simmer and cook uncovered for about 20–25 minutes or until the potatoes are tender.

                Season with salt and pepper to taste. Remove the bay leaf before serving.

                  Ladle the soup into bowls and garnish with fresh parsley for a pop of color.
