Ingredients
  

1 lb Italian sausage (crumbled)

1 medium onion (diced)

3 cloves garlic (minced)

4 cups chicken broth (low-sodium)

1 cup heavy cream

1 can (14 oz) diced tomatoes (with juices)

2 cups fresh spinach (chopped)

1 tsp Italian seasoning

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper (to taste)

1/2 cup Parmesan cheese (grated)

1 tbsp olive oil

Optional: Fresh basil (for garnish)

Instructions
 

Sauté the Sausage: Set your Instant Pot to the Sauté mode. Add olive oil and let it heat for a minute. Then, add the crumbled Italian sausage and cook until browned, about 4-5 minutes. Use a spatula to break it up as it cooks. Once browned, remove the sausage from the pot and set aside.

    Cook the Aromatics: In the remaining fat, add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir in the diced tomatoes (with their juices), chicken broth, heavy cream, Italian seasoning, red pepper flakes, and cooked sausage. Mix well.

        Pressure Cook: Close the lid of the Instant Pot and set the valve to the sealing position. Select the Soup or Manual setting and set the timer for 8 minutes.

          Release Pressure: Once the cooking time is complete, carefully do a quick release of the pressure by turning the valve to the venting position.

            Add Spinach and Cheese: Open the lid and add the chopped spinach, stirring until wilted. Then, mix in the grated Parmesan cheese and season with salt and pepper to taste.

              Serve: Ladle the soup into bowls. Optionally, garnish with fresh basil or additional Parmesan cheese. Enjoy your warm, hearty Instant Pot Keto Tuscan Soup!
