1 ½ cups Arborio rice

4 cups vegetable broth

1 cup mushrooms (cremini or button), sliced

1 medium onion, diced

4 cloves garlic, minced

1 cup grated Parmesan cheese

½ cup heavy cream

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Start by setting your Instant Pot to the sauté mode. Once hot, add the olive oil and diced onion. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add the minced garlic and sliced mushrooms to the pot. Cook for another 3-4 minutes until the mushrooms have released their moisture and are slightly browned.

      Stir in the Arborio rice and sauté for 1-2 minutes until the rice is well-coated and slightly toasted.

        Add the vegetable broth, dried thyme, salt, and black pepper. Stir well to combine.

          Close the lid of the Instant Pot, ensuring the valve is set to sealing, and set it to manual mode. Cook on high pressure for 6 minutes.

            Once the cooking time is complete, carefully perform a quick release of the pressure.

              Open the lid and stir in the heavy cream and grated Parmesan cheese until creamy and well combined. Adjust seasoning to taste.

                Let the risotto rest for 2-3 minutes for it to thicken slightly if needed, then fluff it with a fork before serving.
