Ingredients
  

4 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional, for a kick)

Fresh basil, for garnish

Lemon wedges, for serving

Instructions
 

Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides of the fillets with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside on a plate.

      Sauté the Aromatics: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for 30 seconds until fragrant.

        Add Vegetables: Toss in the cherry tomatoes and cook for about 3-4 minutes, just until softened. Then, add the fresh spinach and cook until wilted.

          Make the Creamy Sauce: Pour in the heavy cream and stir. Add the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Simmer for about 2-3 minutes until the sauce thickens slightly.

            Combine Salmon with Sauce: Return the seared salmon fillets to the skillet, spooning the creamy sauce over them. Cook for an additional 2 minutes to warm the salmon through.
