1 cup crushed graham crackers

1/4 cup melted butter

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/2 cup heavy whipping cream

1 tablespoon shredded coconut (optional, for garnish)

Fresh pineapple slices (for garnish)

Preheat the oven to 325°F (160°C).

    In a mixing bowl, combine the crushed graham crackers and melted butter, mixing until crumbly.

      Distribute the graham cracker mixture evenly among the bottom of individual cheesecake pans or muffin tins, pressing down firmly to form a crust.

        In a large bowl, beat the softened cream cheese until smooth, then add the powdered sugar and vanilla extract, mixing until well combined.

          Stir in the crushed pineapple, incorporating it into the cheesecake mixture for added flavor and texture.

            In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cheesecake mixture until fully combined.

              Spoon the cheesecake mixture over the prepared crusts, smoothing the tops with a spatula.

                Bake in the preheated oven for about 20-25 minutes, until the cheesecakes are set but still slightly jiggle in the center.

                  Allow the cheesecakes to cool at room temperature, then refrigerate for at least 4 hours (or overnight) before serving.

                    Once chilled, carefully remove the cheesecakes from the pans, and top with shredded coconut and fresh pineapple slices for garnish.
