Indian Coconut Shrimp Curry

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

1 can (14 oz) coconut milk

2 tablespoons vegetable oil

1 medium onion, finely chopped

3 garlic cloves, minced

1-inch piece ginger, grated

2 green chilies, slit (adjust to taste)

1 tablespoon curry powder

1 teaspoon turmeric powder

1 teaspoon cumin seeds

1 medium tomato, chopped

1 cup fresh spinach or cilantro, chopped

Salt to taste

Juice of 1 lime

Cooked rice or naan, for serving

Instructions
 

Heat Oil: In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

    Sauté Aromatics: Add the chopped onions, sauté until golden brown. Stir in the minced garlic, grated ginger, and green chilies. Cook for another 2-3 minutes until fragrant.

      Add Spices: Stir in the curry powder and turmeric powder, cooking for about 1 minute to release the spices' flavors.

        Tomato Time: Add the chopped tomatoes and cook until they soften and mix well with the spices, about 5 minutes.

          Coconut Milk: Pour in the coconut milk, stirring well to combine. Bring it to a gentle simmer.

            Cook Shrimp: Add the shrimp to the pan, cooking for about 5-7 minutes until they turn pink and opaque.

              Add Spinach and Seasoning: Stir in the fresh spinach or cilantro, lime juice, and salt to taste. Allow it to simmer for another 2 minutes until the greens wilt.

                Serve: Remove from heat and serve hot with cooked rice or naan.
