Hungarian Goulash (beef stew-soup)

2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

2 medium onions, chopped

3 cloves garlic, minced

2 tablespoons sweet paprika (preferably Hungarian)

1 teaspoon caraway seeds, crushed

1 teaspoon dried oregano

1 bell pepper (red or green), chopped

4 large potatoes, diced

4 carrots, sliced

6 cups beef broth (low sodium)

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat olive oil in a large pot over medium heat. Add the chopped onions and cook until they become translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the beef cubes to the pot and season with salt and pepper. Brown the beef on all sides for about 6-8 minutes.

        Sprinkle the sweet paprika, crushed caraway seeds, and oregano over the beef. Stir well to coat the meat with the spices.

          Add the chopped bell pepper, potatoes, and carrots to the pot. Stir all the ingredients together, ensuring everything is mixed evenly.

            Pour in the beef broth, then add the bay leaf. Bring the mixture to a boil.

              Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally to prevent sticking.

                Taste and adjust seasoning with additional salt and pepper if necessary. Remove the bay leaf before serving.

                  Ladle the goulash into bowls and garnish with chopped fresh parsley.
