Ingredients

1 tomahawk steak (2-3 pounds)

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons olive oil

1 tablespoon butter

1 cup assorted cheeses (cheddar, gouda, brie)

1 cup mixed olives (green and black)

1 cup marinated artichoke hearts

1 cup cherry tomatoes, halved

Fresh herbs (parsley, basil) for garnish

Assorted fresh bread (baguette, ciabatta) for serving

Instructions

Prepare the Steak: Early on the day of cooking, remove the tomahawk steak from the refrigerator and let it come to room temperature for about an hour. Pat it dry with paper towels to ensure a good sear.

Season the Steak: Generously season both sides of the steak with salt and black pepper. Mix minced garlic, rosemary, and olive oil in a small bowl and rub it all over the steak, ensuring even coverage.

Preheat the Grill: Preheat your grill or a large cast-iron skillet over high heat. If using charcoal, create a two-zone fire with hot and medium heat.

Sear the Steak: Once the grill is hot, place the steak over direct heat. Sear each side for about 4-5 minutes to develop a nice crust.

Cook to Desired Doneness: After searing, move the steak to the cooler side of the grill or reduce the heat if using a skillet. Cook until the internal temperature reaches your desired doneness, about 10-15 minutes for medium-rare (125°F).

Rest the Steak: Remove the steak from the heat, place it on a cutting board, and add butter on top to melt. Cover loosely with foil and let it rest for at least 10 minutes for juices to redistribute.

Prepare the Board: While the steak rests, arrange the assorted cheeses, mixed olives, marinated artichoke hearts, and cherry tomatoes on a large wooden cutting board or platter. Fill in any gaps with slices of fresh bread.

Slice the Steak: After resting, carefully slice the tomahawk steak against the grain into thick slices and arrange them on the board alongside the other ingredients.

Garnish and Serve: Finish by sprinkling fresh herbs over the entire board for a pop of color. Serve with additional bread for dipping into juices.

                      - Presentation Tips: To enhance visual appeal, consider serving the steak directly on the bone with the sides grouped together artfully, and garnish with sprigs of rosemary or basil for an inviting touch.
